Super EASY "Chicken Fried Rice" and Lower Carb version

Hey Home Girls! 

Yes, I'm a total blogging addict now!  I am just loving sharing the exciting things happening around our home.  

I hope this blog is fun to read and will give you some great tips, recipes or ideas that you can take away and implement in your home!  I'd also love to hear from YOU!  I think it's great that we can share our ideas and tricks and I know I'm learning so much from so many savvy "home girls" out there!  

Anyway, I thought I'd take a detour from the "path of organization" to share a great and super easy recipe that I made for dinner last night.  This is a favorite in our home and I try to make it once a week now because it's so easy and our whole family loves it.  It's Chicken Fried Rice...the easy way!

I have a rice cooker and my kids LOVE rice, so I usually make a big batch of rice for us to have with our dinners and lunches throughout the week.

I'm living a low-carb lifestyle, however, so I can't have all the rice, so I have a low-carb version of this recipe that I'll also share for any "home-girls" who are low-carbing or diabetic.

Here's the recipe:

You'll need:

*About 3 cups of rice - cooked (or for the low-carbers, 1 package of Birds Eye Steam-in-a-bag Garlic Cauliflower - riced)
*1 can of white meat chicken  (or you can used cooked, cubed chicken breast...but I find the cans are super easy and the kids love them)
*Soy Sauce
*Extra Virgin Olive Oil
*3-4 Tbsp Salted Butter
*Garlic Powder to taste (I used about 3 tablespoons or so because we like our garlic in this family..haha!)
*2-3 eggs, depending on your taste
*One package of steam-in-a-bag broccoli

So, I put my pan on medium heat on the stove and heat up 1 1/2 capfuls of olive oil.  While it's heating up, I put my broccoli in the microwave and heat it according to the directions on the package

Then I add the rice and 2 tbsp butter. I also add soy sauce and garlic powder to taste (again, we like the soy sauce in the family so I'd start with a few tablespoons and see how you like it....we add about 1/8 cup of soy sauce and 1 1/2 Tbsp garlic powder at this point... more comes later.

Get out a separate small pan and scramble the 2 eggs in one tbsp butter. (you can use cooking spray instead of the butter if you're counting calories)  Then add the eggs to your fried rice.

Then comes the canned chicken...make sure you drain the canned chicken..or you can save some of the juice to add later to the mix, if you want to cut back on the oil or butter...but I sorta recommend using the butter and oil....but you can also add a small amount of the chicken juice.

By this time your broccoli should be done...so you drain that and dump it in...draining is REALLY important for the broccoli.  Broccoli juice does NOT add a nice flavor, in my opinion.  haha.

Mix in well, and add more soy sauce, that extra pat of butter and whatever you need to make it taste to your liking. 

That's it!  Bring it to the table and serve.  We have this just with fruit because of the broccoli in this dish.  My "little-home-girl" LOVED this and had several helpings.  It's the only way she'll eat cooked broccoli!  My "little-home-boy" also dug it and is always happy when he hears that this is on the menu for dinner!!

I managed to take a picture of the half-eaten bowl of it, so you could at least see what the finished product looked like.   This recipe makes enough for a fairly hungry family of 4.   =)
